   Mist is something that Tricity really hasn't been lacking lately. It's like a curtain which decided to reveal the trees behind it only when they burst with juicy green. Due to the fact that dogs are not allowed to enter the beach from the beginning of April (except for a small section that is located a bit far from us), we are searching for other places with Portos. Thanks to that, I was able to find the signs of spring right under my feet instead of on the trees. White anemones have run rampant in a small forest located near Kolibki, a district of Gdynia. We tread lightly while passing them, almost tiptoeing, so that we don't trample these delicate flowers.

   Mgła to coś, czego ostatnio naprawdę w Trójmieście nie brakuje. Jest jak kurtyna, która postanowiła odsłonić drzewa dopiero wtedy, gdy buchną soczystą zielenią. Ponieważ plaża od kwietnia nie jest już dostępna dla psów (poza małym odcinkiem, do którego mamy trochę daleko) szukamy z Portosem innych miejsc. Dzięki temu, ślady wiosny znalazłam nie na drzewach, a pod nogami. Białe zawilce rozpanoszyły się w niewielkiem lesie niedaleko gdyńskich Kolibek. Przechodzimy obok nich ostrożnie, prawie na paluszkach, by nie podeptać drobnych kwiatów. 

Wielkanocna sałatka z kaszą quinoa i domowym majonezem bazyliowym

  There is still some time left until Easter; thus, I will post options of Easter meals in the coming days. Each home has its own favourite traditional tastes that are unique to the period of Easter. Surely, salads are one of the meals that can be found on your Easter table, and most of them are prepared witch cooked vegetables. My option involves the use of raw vegetables with an addition of home-made mayonnaise that can be literally prepared in a few minutes. I highly recommend it!

   Do Świąt Wielkanocnych pozostało jeszcze trochę czasu, więc w najbliższych dniach będę przedstawiać Wam świąteczne propozycje. Każdy dom ma swoje ulubione, tradycyjne smaki, które są szczególne dla okresu świątecznego. Zapewne sałatka gości w Waszych domach, a większość jest przygotowywana z ugotowanych warzyw. Moja propozycja zakłada surowe z dodatkiem domowego majonezu, który przygotowuje się w dosłownie parę minut. Gorąco polecam!

Ingredients:

(recipe for 5-6 persons)

1/2 of a leek

1/2 glass of quinoa

2 bunches of radishes (I recommend to use green leaves to prepare pesto*)

6-8 cucumbers in brine

1 avocado

1/2 of a cauliflower head

1 bunch of dill

1 bunch of chive

home-made basil mayonnaise:

250 g of grapeseed oil or rapeseed oil

large handful of fresh basil leaves

1 tablespoon of wine vinegar

1 teaspoon of Dijon mustard

1 teaspoon of sea salt

freshly ground pepper

served with: 3-4 hard-boiled eggs

handful of cress

2 pęczki rzodkiewek (z zielonych liści polecam zrobić pesto*)

6-8 ogórków konserwowych

1 awokado

1/2 kalafiora

1 pęczek koperku

1 pęczek szczypiorku

domowy majonez bazyliowy:

250 g oleju z pestek winogron albo olej rzepakowy

duża garść świeżych listków bazylii

1 łyżka octu winnego

1 łyżeczka musztardy Dijon

1 łyżeczka soli morskiej

świeżo zmielony pieprz

do podania: 3-4 ugotowane jajka na twardo

garść rzeżuchy

Directions:

1. Cook quinoa in a pot with a glass of salted water. Cook it under cover for approx. 15 minutes. Drain it and leave until it cools.

2. Wash all vegetables thoroughly – cut the cauliflower into the so-called fine florets, radishes and cucumbers into fine slices, leek into slices, and chop chive and dill. Put all the ingredients in a large bowl and add cooked quinoa. Add home-made mayonnaise and stir until all the ingredients are evenly combined. Season everything with salt and freshly ground pepper. Serve the salad with hard-boiled eggs and fresh avocado.

3. To prepare the home-made mayonnaise: pour some oil into a tall dish (see photo), add scalded egg, mustard, wine vinegar, salt, and pepper. Pulse with a blender for a couple of minutes until dense. Add fresh basil leaves and mix until smooth. Combine the home-made basil mayonnaise with the salad.

A oto jak to zrobić:

1. Komosę ryżową gotujemy w garnku ze szklanką osolonej wody, pod przykryciem przez ok. 15 minut. Po ugotowania odsączamy i czekamy, aż ostygnie.

2. Wszystkie warzywa dokładnie myjemy – kalafior kroimy na tzw. drobne różyczki, rzodkiewki i ogórki konserwowe w cienkie plastry, por w talarki, szczypior i koperek na drobno. Całość przekładamy do dużej miski i dodajemy ugotowaną kaszę. Dodajemy domowy majonez i mieszamy, do połączenia się wszystkich składników. Doprawiamy solą i świeżo zmielonym pieprzem. Sałatę podajemy z ugotowanymi jajkami na twardo i świeżym awokado.

3. Aby zrobić domowy majonez: do wysokiego naczynia (patrz na zdjęciu) nalewamy olej, dodajemy sparzone jajko, musztardę, ocet winny, sól i pieprz. Umieszczamy blender i miksujemy pulsacyjnie przez kilka minut, do momentu aż uzyskamy gęsty majonez. Dodajemy świeże liście bazylii i miksujemy do uzyskania jednolitej masy. Tak przygotowany majonez dodajemy do sałatki.

Do wysokiego naczynia nalewamy olej, dodajemy sparzone jajko, musztardę, ocet winny, sól i pieprz. Umieszczamy blender i miksujemy pulsacyjnie przez kilka minut, do momentu aż uzyskamy gęsty majonez.

Add fresh basil leaves and mix until smooth.

Dodajemy świeże liście bazylii i miksujemy do uzyskania jednolitej masy.

Combine the home-made basil mayonnaise with the salad.

   Each of us regularly does the small cleaning up at our homes. However, a new season requires greater effort and the introduction of a few changes. If there are still the leftovers of Christmas visible at your home, a dried mistletoe is hanging from the lamp, thick woollen sweaters reign in your wardrobe, and there is a pair of your beloved Emu standing in the hallway instead of a pair of leather ballet flats, this post is ideal for you.

    Każda z nas regularnie robi w domu drobne porządki. Nowa pora roku wymaga jednak większego wysiłku i wprowadzenia kilku zmian. Jeśli w Twoim mieszkaniu nadal widać pozostałości po Świętach Bożego Narodzenia, na lampie wisi wyschnięta jemioła, w szafie królują grube wełniane swetry, a w przedpokoju stoi ukochana para Emu zamiast skórzanych baletek, to ten wpis jest idealny dla ciebie.

– If you want to feel the spring at your home, you mostly need to take care of the space on the balcony or near the windows. Throw away old dried flowers, clean the floor thoroughly, clean the railing and the windows. The space for your arrangement has to be clean in the first place. Your task will be to create a folder with at least ten photos of already decorated balconies (the study conducted among the female consumers of Altax brand shows that as many as 64% of women are searching for their inspiration on-line – those who are interested in the study, can read more here).

– Jeśli chcesz poczuć wiosnę w mieszkaniu, to przede wszystkim zadbaj o przestrzeń na balkonie lub przy oknach. Wyrzuć stare uschnięte kwiaty, dokładnie pozamiataj podłogę, wyczyść balustradę i umyj okna. Przestrzeń do aranżacji musi być przede wszystkim czysta. Twoim kolejnym zadaniem będzie stworzenie folderu z przynajmniej dziesięcioma zdjęciami już gotowych balkonów (z badań przeprowadzonych wśród konsumentek marki Altax wynika, że aż 64 procent kobiet poszukuje inspiracji przez internet – zainteresowanych badaniami zapraszam tutaj).

– Your next task will be to freshen up the air at your home. When leaving home for work, leave the windows tilted – it's best to do it in the bedroom and in the kitchen. Remember to throw out the trash. Most often, I use air and cloth fresheners before I leave. When I come back home, the fragrance is delicate and refreshing. – Twoim kolejnym zadaniem będzie odświeżenie powietrza w domu. Wychodząc do pracy zostaw uchylone okna, najlepiej w sypialni i kuchni, koniecznie wynieś też śmieci. Ja najczęściej jeszcze przed wyjściem używam zapachu do powietrza i tkanin. Jak wracam z pracy, to zapach jest delikatny i orzeźwiający. Polecam ten z serii Perfect House marki Barwa, który pachnie jaśminem, irysami, bergamotką i cytrusami. Dobrze jest raz na jakiś czas umyć sprzęt AGD – zwłaszcza zmywarkę, piekarnik i pralkę (zobaczysz, że dzięki temu w mieszkaniu będzie lepiej pachnieć).

– Spring is an ideal time for metamorphoses and refurbishing things that have been unused for months. Thanks to the inspirations that I found, I decided to clean an old chair (bought in the treasury of museum pieces, that is on OLX.pl) and to paint it. I chose Altax Viva Garden paint to do it. You can cover many different surfaces with it – wood, brick, metal, concrete, or even terracotta and stone. The colour palette has as many as 29 colours. I chose "Blooming Magnolia" (you can quickly cover the previous layers with Altax paints, thus you won't have any problem with changing the colour).

– Wiosna to idealny czas na metamorfozy i odrestaurowanie rzeczy, które od miesięcy czekają nieużywane. Ja dzięki wyszukanym inspiracjom postanowiłam oczyścić stare gięte krzesło (kupione w skarbnicy staroci, czyli na OLX.pl) i je pomalować. Wybrałam do tego farbę Altax Viva Garden, którą można pokrywać wiele różnych powierzchni – drewno, cegłę, metal, beton, a nawet terakotę i kamień. Paleta barw liczy aż 29 kolorów. Ja wybrałam „Kwitnącą Magnolię” (farby Altaxu bardzo łatwo pokrywają poprzednie warstwy, więc bez problemu kolor można zmienić).

– Our generation doesn't pay much attention to the tablecloths, napkins, and other products made of fabric. Without them our home loses quite a lot. In the past, the goods were passed on from generation to generation. Grandmothers, mothers, or even older sisters keep beautifully ironed and ordered fabrics in their dressers to this day. Unfortunately, I can't pride myself in such a collection any more. Therefore, I've decided to embark on a revolution in my dresser even before Easter and the grilling season. I took out all pillowcases, tablecloths, and napkins. I washed and cleaned them. I used the Mini Plus steamer by SteaMaster. It is really simple to use. It is enough to hang a pillowcase on the door and you can steam it thoroughly – that is a lot more practical than the continuous rearranging of large cloth on the ironing desk (the device is also great when it comes to the steaming of drapes. Until the 20th of April, the steamer will be 15 % cheaper. It is enough to insert the code "MLE" during the purchase.

– Nasza generacja nie przywiązuje już zbytniej wagi do obrusów, serwetek i innych materiałowych wyrobów, bez których nasz dom wiele traci. Kiedyś te dobra przekazywane były z pokolenia na pokolenie. Babcie, mamy a nawet starsze siostry do dziś w swoich komodach trzymają pięknie wyprasowane i ułożone w kostkę materiały. Niestety, ja już nie mogę pochwalić się taką kolekcją. Dlatego jeszcze przed Świętami Wielkanocnymi i sezonem grillowym postanowiłam zrobić rewolucję w komodzie. Wyciągnęłam wszystkie poszewki, obrusy i serwetki. Wyprałam je i wyprasowałam. Użyłam prasowacza parowego w wersji Mini Plus marki SteaMaster, bo jest bardzo prosty w użyciu, wystarczy powiesić poszewkę na drzwiach i można ją dokładnie wyprasować – to wygodniejsze niż ciągłe przekładanie za dużego materiału na desce do prasowania (świetnie też sprawdził się przy prasowaniu zasłon). Do 20 kwietnia mini prasowacz będzie przeceniony o 15 procent. Wystarczy wpisać hasło MLE w trakcie dokonywania zakupu.

– I'm not a person who keeps her clothes ordered – ideally stacked on one another. Once in a while, I need to do a large cleaning up in my wardrobe so that I can at least know what I have. If you haven't segregated winter and summer clothes yet, an ideal moment has come to do it. You can place your winter jackets on the top shelf or near the bottom of your wardrobe, and have your woollen sweaters cleaned. After you collect your clothes from the laundry service, they will be clean, ironed, hung on hangers, and covered with foil. Hang them in your wardrobe and let them, fragrant as they are, wait for the winter season. Do the same with your winter shoes – clean them thoroughly before you place them in a dark corner of the wardrobe. Pay special attention to whether there are any leftovers of salt used for the de-icing of sidewalks (unfortunately, this substance is especially damaging to our shoes).

– Replace your sofa pillows or the bedspread on your bed with new ones. Now, you've had enough of winter season items, but you will be missing them in a few months. Hide your pillowcases and your thickest blanket in a cardboard and slide it under the the bed. If you are searching for nice decorations for your home, I recommend H&M Home on-line shop where you can find something pretty.

– Your last task will be to buy a bouquet of fresh flowers. Today after work, the first thing that I will do is heading to my favourite flower shop. If your today's task list included, first and foremost, food shopping, notice that many shops offer, for example, tulip bunches. Remember! Tulips love sweet water, so don't spare them a few tablespoons of sugar.

– Nie należę do osób, które trzymają ubrania idealnie poukładane w równą kosteczkę. Raz na jakiś czas muszę robić generalny porządek w szafie, aby w ogóle wiedzieć co mam. Jeśli jeszcze nie posegregowałaś rzeczy zimowych i letnich, to nadszedł idealny moment aby to zrobić. Schowaj zimowe kurtki na najwyższą półkę lub dno szafy, a wełniane swetry oddaj do czyszczenia. Z pralni rzeczy dostaniesz wyczyszczone, wyprasowane, powieszone na wieszaku i przykryte folią. W tym stanie powieś je w szafie i niech takie pachnące czekają na sezon zimowy. Podobnie zrób z butami zimowymi – zanim zostaną odłożone w ciemny kąt szafy porządnie je wyczyść. Szczególnie zwróć uwagę, czy nie ma na nich pozostałości soli, którą używa się do odladzania chodników (niestety ten środek wyjątkowo niszczy obuwie).

– Wymień poduszki na kanapie albo narzutę na łóżku. Teraz masz dosyć rzeczy w zimowym klimacie, ale za kilka miesięcy za nimi zatęsknisz. Schowaj poszewki i najgrubszy koc do kartonu i wsuń go pod łóżko. Jeśli szukasz ładnych dekoracji do mieszkania, to polecam internetowy sklep H&M Home, tam zawsze znajdzie się coś ładnego.

– Twoim ostatni zadaniem będzie kupienie bukietu świeżych kwiatów. Dziś po pracy w pierwszej kolejności udaj się do ulubionej kwiaciarni. Jeśli na twojej dzisiejszej liście zadań były przede wszystkim zakupy spożywcze, będąc w sklepie zwróć uwagę, że i tam są dostępne na przykład wiązanki tulipanów. Pamiętaj! Tulipany kochają słodką wodę, więc nie szczędź im kilku łyżek cukru.

Mazurek limonkowo-kokosowy

I love the period of time before Easter. The air is finally fresh after the first spring rain. The smell of soil is discernible. There are different colours of tulips shouting over one another on the local market. Everything is so fresh and innocent – waiting for its time. I buy catkins, hyacinths, daffodils, and sprigs of forsythia. Easter is coming closer…

Uwielbiam okres przedwielkanocny. Powietrze nareszcie rześkie po pierwszych wiosennych deszczach. Czuć ziemię. Na okolicznym rynku kolory tulipanów przekrzykują się. Wszystko takie świeże i niewinne – czeka na swój czas. Kupuję bazie, hiacynty, żonkile i gałązki forsycji. Wielkanoc coraz bliżej…

Ingredients:

(baking tray with a size of:  9 cm x 33 cm or with a diameter of: 28-9 cm)

shortcrust pastry:

150 g of spelt flour (you can also use regular wheat flour)

120 g of cooled butter

30 g of sugar

1-2 tablespoons of waterlime and coconut cream:

3 yolks

30 g of butter

60 g of sugar

3 limes (zest + juice)

5-6 tablespoons of canned coconut milk (white dense part)

For decoration: coconut flakes + lime/lemon zest

Skład:

(forma o wymiarach:  9 cm x 33 cm lub o średnicy: 28-9 cm)

150 g mąki orkiszowej (może być zwykła, pszenna)

120 g schłodzonego masła

30 g cukru

1-2 łyżki wody

krem limonkowo – kokosowy:

3 żółtka

30 g masła

60 g cukru

3 limonki (skórka + sok)

5-6 łyżek mleka kokosowego z puszki (biała, gęsta część)

do dekoracji: wiórki kokosowe + otarta skórka z limonki/cytryny

1. Sift the flour into a wide bowl (or onto the pastry board). Add sliced butter, sugar, and water. Knead the dough using rough movements and place it in the fridge for 30 minutes. Preheat the oven to 180ºC. Take the dough out of the oven and place it on a tray lined with parchment paper. Make a few small holes in the top with a fork. Bake for approx. 15-18 minutes until golden. Take the baked bottom out of the oven and wait until it cools.
2. To prepare the cream: whisk the yolks with sugar in a water bath. Add lime juice, lime zest, and butter. Stir everything (still over the steam) until it becomes slightly dense (approx. 10-12 minutes). Set it aside and wait until it cools. Combine it with the dense coconut milk. Spread the cream over the baked bottom. Decorate the cake with coconut flakes and lime zest.

 

1. Do szerokiej miski (albo na stolnicę) przesiewamy mąkę, dodajemy pokrojone na kawałki masło, cukier i wodę. Zdecydowanym ruchem zagniatamy ciasto i odkładamy na 30 minut do lodówki. Rozgrzewamy piekarnik do 180 stopni C. Ciasto wyjmujemy z lodówki i wykładamy nim formę wyłożoną papierem do pieczenia. Wierzch ciasta nakłuwamy widelcem. Pieczemy ok. 15-18 minut, aż ciasto uzyska złoty kolor. Upieczony spód wyjmujemy z piekarnika i czekamy aż ostygnie.

2. Aby zrobić krem: żółtka ubijamy z cukrem w kąpieli wodnej. Dodajemy wyciśnięty sok z limonki, otartą skórkę i masło. Całość mieszamy (nadal na parze) do momentu, aż masa lekko zgęstnieje (ok. 10-12 minut). Odstawiamy z ognia do ostygnięcia. Łączymy z gęstym mlekiem kokosowym. Tak powstały krem przekładamy na upieczony spód ciasta. Mazurek dekorujemy wiórkami kokosowymi i skórką z limonki.

Take the cooled shortcrust pastry out of the oven and place it in a greased baking tray. Make a few small holes in the top with a fork. Bake for approx. 15-18 minutes until golden. The oblong baking tray for baking this type of cake possesses a movable bottom which helps to take it out of the tray.

Schłodzone kruche ciasto wyjmujemy z lodówki i wykładamy nim natłuszczoną formę do pieczenia. Wierzch ciasta nakłuwamy widelcem. Pieczemy ok. 15-18 minut, aż ciasto uzyska złoty kolor. Podłużna forma do pieczenia mazurków posiada ruchome dno, co umożliwia łatwe wyjęcie ciasta.

Spread the ready lime and coconut cream over the baked bottom.

Gotowy krem limonkowo-kokosowy wykładamy na upieczony spód.


Decorate the cake with lime zest and coconut flakes.

Całość dekorujemy otartą skórką z limonki i wiórkami kokosowymi.
