I often get questions (both on the blog and during my workshops) whether I've been learning the art of cooking since childhood or since the moment I started my blog. I always try to be honest and say that I'm still learning and there's a lot ahead of me. But, in fact, there was a lot of cooking going on at my family home. I always use it as a point of reference in my recipes. Maybe that's because I had an open house and when our guests came, our greatest pleasure was to feed them in the best way we could. The table was already set, with plenty of home-made white transparent preserves and some shortcrust pastry at hand to prepare an apple pie. Back in those times, no one was on a diet, you never said no to the delicacies prepared by the housewives, and the talks over hot pastry turned into long house parties. At times, people stayed overnight so even breakfast was more festive than usual.

Now when cooking has become my everyday reality, I spend a lot of time doing it. If I have external orders, and I take photos mostly during the day with the available daylight, I bake in the evenings when the atmosphere at home cools down and I can peacefully start my culinary experiments. When it comes to baking, I like focused work, as baking requires some reflection and precision in the proportion of ingredients. Today, I would like to share my recipe for a coffee and date meringue cake with caramelised nuts and egg flip. For many, it is a real culinary drag, for others a great pleasure. However, I hope that this recipe will be a piece of cake.

Bardzo często padają pytania (zarówno tu na blogu jak i na moich warsztatach) czy gotować uczyłam się od dziecka, czy z chwilą założenia bloga. Zawsze szczerze odpowiadam, że uczę się wciąż i jeszcze dużo przede mną. Ale faktycznie w moim domu rodzinnym zawsze się sporo gotowało. Przy przepisach często się do tego odwołuję. Może dlatego, że dom był otwarty, a gdy zjawiali się goście, to przecież największa przyjemność ich dobrze nakarmić. Stoliczek nakryty, domowe konfitury z papierówek w zapasach, kruche ciasto pod ręką, żeby naprędce upiec szarlotkę. W tamtych czasach nikt nie był na diecie, nie odmawiało się słodkości Pani Domu a rozmowy przy gorącym cieście zamieniały się w długie posiadówki. Czasami ktoś na noc zostawał, więc śniadanie było bardziej huczne niż na co dzień.

Gdy teraz gotowanie to moja codzienność, poświęcam temu sporo czasu. Jeżeli mam zamówienia zewnętrzne, a zdjęcia wykonuję głównie w ciągu dnia, przy dziennym świetle, to piekę wieczorami, gdy już bieżąca atmosfera w domu się ostudzi, a ja mogę spokojnie eksperymentować. Przy ciastach lubię pracę w skupieniu, bo wymaga przemyślenia i precyzji w proporcji składników. Dzisiaj chciałabym podzielić się z Wami moim przepisem tort bezowy kawowo-daktylowy z karmelizowanymi orzechami i ajerkoniakiem. Dla jednych to kuchenna zmora, dla innych kulinarna przyjemność, jednakże mam nadzieję, że z tym przepisem pójdzie Wam gładko jak po maśle.

Recipe for a coffee and date meringue cake with caramelised nuts and egg flip

Ingredients:

Meringue:

6 whites

2-3 tablespoons of ground coffee, you can use instant coffee

250 g of fine sugar

Cream:

500 g of mascarpone

250 ml of whipping cream, room temperature (30% or 36% butterfat)

approx. 150 g of nuts

4-5 tablespoons of brown sugar

2-3 tablespoons of egg flip or other liqueur

topping:

roasted almond flakes + 1-2 tablespoons of ground powdery

coffee or cocoa

Przepis na Tort bezowy kawowo-daktylowy z karmelizowanymi orzechami i ajerkoniakiem

Skład:

Beza:

6 białek

2-3 łyżki mielonej kawy może być rozpuszczalna

250 g drobnego cukru

Krem:

500 g serka mascarpone

250 ml śmietanki 36% lub 30% (ciepła)

ok. 150 g orzechów + garść daktyli

4-5 łyżek brązowego cukru

2-3 łyżki ajerkoniaku lub innego likieru

do posypania: prażone płatki migdałowego + 1-2 łyżki mielonej na drobny pył kawy lub kakao

Directions:

  1. Preheat the oven to 180ºC (use convection mode). Whisk the whites. Add one tablespoon of sugar at a time in the last phase of beating and then, some sifted coffee. Whisk until everything forms stiff and shiny peaks. It'll take approx. 6-8 minutes. Draw two circles with a diameter of approx. 20/22 cm on parchment paper. Afterwards, place the froth onto the drawn circles (I recommend placing the whisked froth in a pastry bag and using it to spread the mixture onto the drawn circles). Decrease the temperature to 110ºC and bake for 1.5 hours. Take the meringues out of the oven and cool them.
  2. To prepare the cream: in a hot pan melt some sugar until it becomes brown and liquid. Add roasted almonds and heat up the whipping cream. Stir everything. Then, add whisked mascarpone and egg flip. Stir everything until evenly combined.
  3. Place the meringue bottom on the parchment paper. Apply the cream and cover it with meringue. Sprinkle the top with roasted almond flakes and coffee. We can decorate it with fresh flowers.

A oto jak to zrobić:

  1. Piekarnik rozgrzewamy do 180 stopni C (opcja: termoobieg). Z białek ubijamy pianę, w końcowej fazie ubijania dodajemy po łyżce cukier, na końcu przesianą przez sitko kawę. Miksujemy do momentu, aż piana będzie lśniąca i sztywna. Zajmie nam to ok. 6-8 minut. Na papierze do pieczenia odrysowujemy dwa okręgi o średnicy ok. 20/22 cm. Następnie pianę przekładamy na rozrysowane okręgi (polecam ubitą pianę przełożyć do rękawa cukierniczego i wyciskać koła bezpośrednio na narysowane okręgi). Temperaturę zmniejszamy do 110 stopni C i pieczemy bezy przez 1,5 godziny. Po upieczeniu wyjmujemy z piekarnika i studzimy.
  2. Aby przygotować krem: na rozgrzanej patelni rozpuszczamy cukier, aż zbrązowieje i zrobi się płynny. Dodajemy prażone orzechy i podgrzaną śmietankę. Mieszamy. Następnie dodajemy ubity serek mascaprone i ajerkoniak. Całość mieszamy do połączenia się składników.
  3. Blat bezowy rozkładamy na paterze. Nakładamy krem i przykrywamy bezą. Wierzch posypujemy prażonymi płatkami migdałowymi i kawą. Możemy ozdobić świeżymi kwiatami.
