I've always liked to spend Valentine's Day at home. With my significant other. I wasn't really into restaurant tables decorated with pink hearts. As if the feeling of love was present only on that specific day. What I like to do on that occasion is I like to bake something special. Something sweet so that we can all eat something under the duvet in the morning and enjoy the moment for as long as possible. When it comes to sweet treats – what would you like to eat on Valentine's Day?

*   *   *

Ingredients:

(loaf pan or traditional cake tin with a diameter of 26/29 cm)

250 g of baked beetroots (you can find ready products in stores) + 2 tablespoons of beetroot juice from the baked beetroots (it will be useful for the cream)

250 g of wheat flour

4 eggs

1 bar of white chocolate + 120 g of brown sugar

180 ml of plant oil

1.5 teaspoons of baking powder

cream:

250 g of mascarpone + 2 tablespoons of icing sugar

2 tablespoons of beetroot juice

Skład:

(keksówka lub tradycyjna tortownica o średnicy 26/29 cm)

250 g upieczonych buraków (w sklepach są już gotowe) + 2 łyżki powstałego soku (przyda się do kremu)

250 g mąki pszennej

4 jajka

1 tabliczka + 120 g brązowego cukru

180 ml oleju roślinnego

1,5 łyżeczki proszku do pieczenia

krem:

250 g serka mascarpone + 2 łyżki cukru pudru

2 łyżki soki z buraków

Directions:

  1. All of the ingredients should have room temperature so that you can avoid ending up with a sad layer. Blend the beetroots with oil in a food processor or with the use of a blender to get a purée. Melt the chocolate in a water bath.
  2. Mix the eggs with sugar until thick and fluffy. Add sifted flour with baking powder, beetroot purée, and melted chocolate. Stir everything with a spatula until evenly combined. Place the mixture in a baking tray lined with parchment paper. Bake it in the oven preheated to 160ºC for approx. 45 minutes or until the skewer is dry. Take it out of the oven and wait until it cools.
  3. To prepare the cream: mix mascarpone with icing sugar and beetroot juice. Pour the ready cream onto the cooled cake. Decorate it with dried rose petals.

A oto jak to zrobić:

  1. Wszystkie składniki powinny mieć temperaturę stołową tak by uniknąć zakalca. Buraki z olejem miksujemy w malakserze lub za pomocą blendera na puree. Czekoladę roztapiamy w kąpieli wodnej.
  2. Jajka ucieramy z cukrem na puszystą masę. Dodajemy przesianą mąkę z proszkiem do pieczenia, puree z buraków i roztopioną czekoladę. Całość mieszamy szpatułką do połączenia się składników. Ciasto przekładamy do formy wyłożonej papierem do pieczenia. Pieczemy w rozgrzanym piekarniku w 160 stopniach C przez ok. 45 minut lub do tzw. suchego patyczka. Wyjmujemy i czekamy, aż ostygnie.
  3. Aby przygotować krem: ser mascarpone ucieramy z cukrem pudrem i sokiem z buraków. Krem przekładamy na ostudzone ciasto. Dekorujemy ususzonymi płatkami różanymi.

Rozpuszczoną białą czekoladę przelewamy do masy buraczanej.

Jak zrobić krem o różowym zabarwieniu, unikając barwników spożywczych? Polecam dodać 2 łyżki soku z upieczonych buraków – kolor jest piękny!

Krem przekładamy na ostudzone ciasto.

Ciasto dekorujemy suszonymi płatkami róży.
