Probably few of us decided to organise their wedding reception in their own houses, but I wanted to approach today's post with a pinch of salt – who will forbid us to organise a small event to celebrate, for example, an anniversary?Or a wedding after-party? Besides, this recipe will become useful on numerous other occasions – it is simple, and the finishing effect will surely impress your guests.

Albo poprawin? Ten przepis przyda Wam się zresztą na wiele innych okazji – jest prosty, a efekt końcowy na pewno wzbudzi uznanie. 
  Ingredients:

(baking tray with a diameter of 26 or 29 cm)

Sponge cake:

5 eggs

150 g of wheat flour

150 g of cane sugar (you can also use regular sugar)

1 tablespoon of potato flour

6-8 tablespoons of lemon liqueur e. g. Limoncello (according to your liking)

Cream:

500 g of ricotta cheese

4-5 tablespoons of icing sugar

2 tablespoons of natural yoghurt

lime zest and juice from 1 lime

approx. 250 g of bilberries

for decoration:

fresh flowers (e. g. daisies)

5 jajek

150 g mąki pszennej

150 g cukru trzcinowego (może być zwykły)

1 łyżka mąki ziemniaczanej

6-8 łyżek likieru cytrynowego np. Limoncello (ilość wg własnego uznania, do nasączenia biszkoptów)

Przepis na krem:

500 g sera ricotta

4-5 łyżek cukru pudru

2 łyżki jogurtu naturalnego

otarta skórka i sok z 1 limonki

ok. 250 g borówek amerykańskich

do dekoracji: świeże kwiaty (np. stokrotki)

Directions:

1.To prepare the sponge cake: beat the whites with a mixer until they form stiff peaks. Add one tablespoon of sugar at a time in the last phase of beating (that is when the froth is shiny and stiff).Afterwards, while still mixing, add egg yolks.Set the mixer aside.Add sifted wheat flour and potato flour.Stir everything delicately until evenly combined.Pour the mixture into a baking tray lined with parchment paper.Bake it in the oven preheated to 160ºC for approx. 40 minutes.Take it out of the oven and wait until it cools.

2.To prepare the cream: mix ricotta with a mixer, add yoghurt, sugar, lime juice, and lime zest. Mix everything until smooth.Cool the cream in the fridge for at least 30 minutes.

3.Cut the cooled sponge cake into 3 or 4 layers and sprinkle them with liqueur.Spread the cream between the layers and finish the top of the cake.Decorate it with bilberries. The cake tastes best when it's cooled (at least 1-2 hours in the fridge before serving).Decorate it with fresh flowers.

A oto jak to zrobić:

  1. Aby przygotować biszkopt: mikserem ubijamy pianę z białek, w ostatniej fazie ubijania (czyli, gdy piana będzie lśniąca i sztywna) dodajemy po łyżce cukier. Następnie stale miksując, dodajemy żółtka. Odstawiamy mikser. Dodajemy przesianą mąkę pszenną i ziemniaczaną. Delikatnie mieszamy do połączenia się składników. Ciasto przelewamy do formy, której dno wykładamy papierem do pieczenia. Pieczemy w rozgrzanym piekarniku w 160 stopniach C przez 40 minut. Wyjmujemy z piekarnika i odstawiamy do ostygnięcia.
  2. Aby przygotować krem: ricottę mieszamy mikserem, dodajemy jogurt, cukier, sok i otartą skórkę z limonki. Mieszamy do uzyskania jednolitej masy. Masę schładzamy w lodówce min. 30 minut.
  3. Ostudzony biszkopt kroimy na 3 lub 4 płaty i skrapiamy likierem. Przekładamy schłodzonym kremem i wykańczamy górę ciasta. Dekorujemy borówkami. Tort najlepiej smakuje schłodzony (przed podaniem min. 1-2 godziny w lodówce). Dekorujemy świeżymi kwiatami.
