Christmas can't exist without dumplings! It is our flagship national dish, and it's undeniable. From those classic with cabbage and mushrooms, to those with meat, with spinach, and with potatoes and onion with grease and large pork scratchings and a considerable portion of sour cream. I love all of them, and it's best when we can meet at the table and prepare them together with our family. That is my plan this year!

Today, I chose dumplings with buckwheat groats which can be nicely combined with feta cheese (you can also add sheep cheese or goat cheese if you like) and smoked paprika that imitates smoked bacon. Nie ma Świąt bez pierogów! To nasze sztandarowe narodowe danie i to nie ulega wątpliwości. Od tych klasycznych z kapustą i grzybami, z mięsem, ze szpinakiem po ruskie okraszone grubymi skwarkami i porządną porcją kwaśnej śmietany. Uwielbiam je wszystkie, a najprzyjemniej jest jeśli możemy spotkać się przy stole i wspólnie je lepić. Taki mam plan w tym roku!

Dzisiaj wybrałam dla Was pierogi z kaszą gryczaną, która doskonale łączy się z fetą (może być również bryndza lub kozi ser, jak ktoś lubi) i wędzoną papryką, która imituje wędzony boczek. Ingredients:

dough:

600 g of wheat flour

approx. 300 ml of warm water

2-3 tablespoons of clarified butter

1 eggpinch of salt

filling:

2 packets of cooked buckwheat groats

2 onions (medium-sized)

1 package of feta cheese (you can also use sheep or goat cheese)

4-6 cloves of garlic (I like to add a large portion :-))

1 bunch of parsley

2 tablespoons of smoked paprika

herbal pepper, sea salts

erved with:

braised onion, parsley, sour cream

ciasto:

600 g mąki pszennej

ok. 300 ml ciepłej wody

2-3 łyżki masła sklarowanego

1 jajko

szczypta soli

farsz:

2 torebki ugotowanej kaszy gryczanej

2 cebule (średnie)

1 opakowanie fety (może być bryndza lub ser kozi)

4-6 ząbków czosnku (lubię dużą porcję :-))

1 pęczek pietruszki

2 łyżki wędzonej papryki

pieprz ziołowy, sól morska

do podania: duszona cebula, natka pietruszki, kwaśna śmietana

Directions:

1. Sift the flour and salt. Add one egg. Knead the dough while adding warm water little by little. When the ingredients are combined, add butter and knead the dough again until smooth. Cover it with a linen table napkin.

2. Combine the cooked buckwheat groats with feta. Knead everything with a fork. Add fried onion and garlic, parsley, and smoked paprika. Mix everything.

3. Roll the dough out on the pastry board and cut out circular pieces (e. g. with the use of a glass). Place some filling in the middle of each piece. Fold the pieces in half. Use your finger to dab a little water around the edge of each piece before sealing. Cook the dumplings in a large pot with salted water until they flow out. Before serving, it's worth frying the dumplings with some onion. Serve with cream, a pinch of smoked pepper, and chopped parsley.

A oto jak to zrobić:

  1. Mąkę  z solą przesiewamy i wbijamy jajko. Dolewając stopniowo ciepłej wody, wyrabiamy ciasto. Kiedy składniki się połączą, dodajemy masło i ponownie zagniatamy ciasto, aby zrobiło się gładkie. Przykrywamy lnianą ściereczką.
  2. Ugotowaną kaszę gryczaną łączymy z fetą. Całość ugniatamy widelcem. Dodajemy podsmażoną cebulę i czosnek, pietruszkę i wędzoną paprykę. Mieszamy.
  3. Ciasto rozwałkowujemy na stolnicy i wycinamy kółka (np. za pomocą szklanki). Na środku każdego kółka kładziemy gotowy farsz, zginamy w połowę. Przed sklejeniem warto zwilżyć brzegi wodą. Pierogi gotujemy w dużym garnku z osoloną wodą, do momentu aż wypłyną. Przed podaniem warto podsmażyć z cebulą. Podajemy ze śmietaną, szczyptą wędzonej papryki i posiekaną pietruszką.
