Ingredients:

Sponge cake:

5 eggs150 g of spelt flour (you can also use regular flour)

150 g of cane sugar (you can also use regular sugar)

1 tablespoon of potato flour

Cream:

200 g of vanilla halvah

500 g of mascarpone

200 g of whipping cream (30% or 36% butterfat)

1 – 2 shot glasses of currant or raspberry liqueur

5 jajek

150 g mąki orkiszowej (może być zwykła)

150 g cukru trzcinowego (może być zwykły)

1 łyżka mąki ziemniaczanej

Przepis na krem:

200 g chałwy waniliowej

500 g serka mascarpone

200 g śmietanki kremówki 30% lub 36 %

1 -2 kieliszki nalewki porzeczkowej lub malinowej

Directions:

  1. To prepare the sponge cake: beat the whites with a mixer until they form stiff peaks. Add one teaspoon of sugar at a time in the last phase of beating (that is when the froth is shiny and stiff). Afterwards, while still mixing, add egg yolks. Set the mixer aside. Add sifted spelt flour and potato flour. Stir everything delicately until evenly combined. Pour the mixture into a baking tray lined with parchment paper. Bake it in the oven preheated to 160ºC for approx. 40 minutes. Take it out of the oven and wait until it cools.
  2. To prepare the cream: pour the whipping cream into a pot, add halvah, and heat everything on low heat remembering to stir the mixture until the halvah is melted. Set everything aside to let it cool. Afterwards, add 2-3 tablespoons of mascarpone cheese and stir everything until smooth. Delicately whip the rest of the mascarpone cheese and set it aside – use it to decorate the cake.
  3. Cut the cooled sponge cake into 3 or 4 layers and sprinkle them with liqueur. Spread halvah cream between the layers and finish the top and the sides of the cake with whisked mascarpone cheese. The cake tastes the best when it's cooled (at least 1-2 hours in the fridge before serving).

Comment: To decorate the cake, I used snowdrops (from my own garden :-)) and cladonia.

A oto jak to zrobić:

  1. Aby przygotować biszkopt: mikserem ubijamy pianę z białek, w ostatniej fazie ubijania (czyli jak już piana będzie lśniąca i sztywna) dodajemy po łyżce cukier. Następnie stale miksując, dodajemy żółtka. Odstawiamy mikser. Dodajemy przesianą mąkę orkiszową i ziemniaczaną. Delikatnie mieszamy do połączenia się składników. Ciasto przelewamy do formy, której dno wykładamy najpierw papierem do pieczenia. Pieczemy w rozgrzanym piekarniku w 160 stopniach C przez 40 minut. Wyjmujemy z piekarnika i odstawiamy do ostygnięcia.
  2. Aby przygotować krem: śmietankę przelewamy do garnuszka, dodajemy chałwę i podgrzewamy na małym ogniu, stale mieszając, aż chałwa się rozpuści. Odstawiamy do ostygnięcia, a następnie dodajemy 2-3 łyżki serka mascarpone i mieszamy, do uzyskania jednolitej masy. Resztę serka mascarpone delikatnie ubijamy i odstawiamy – będzie nam potrzebna do dekoracji tortu.
  3. Ostudzony biszkop kroimy na 3 lub 4 płaty i skrapiamy nalewką. Przekładamy kremem chałwowym i wykańczamy górę i brzegi tortu ubitym serkiem mascarpone. Tort najlepiej smakuje schłodzony (przed podaniem min. 1-2 godziny w lodówce)

Komentarz: Do dekoracji tortu wykorzystałam przebiśniegi (moje ogrodowe :-)) oraz chrobotek.
