A week ago, a hurricane of energetic pre-school kids ran through our house. We were celebrating Hanusia’s seventh birthday. On that day, the weather was fantastic so most competitions took place in the garden. Several dozen water-filled balloons (oh gosh!), apples on strings hanging from tree branches, art accessories for decorating masks…the last three years have taught us full readiness! Because when you are visited by more than twenty six-year-olds, there’s no time for improvisation. And I’m dead serious :). When it comes to the cake, you also need to have everything prepared – either it’s a sponge biscuit with fruit and strawberry jelly or meringue. Crispy and slightly runny inside with white chocolate cream and fruit. Even though many people think that children aren’t too great enthusiasts of birthday cakes, when it comes to this meringue, there were no crumbs left for the exhausted parents.

  Tydzień temu przez nasz dom przewinął się huragan soczystej energii zerówkowiczów. Wyprawialiśmy siódme urodziny Hanusi. Tego dnia pogoda cudownie dopisała, więc większość konkursów odbyła się w ogrodzie. Kilkadziesiąt balonów napełnionych wodą (o zgrozo!), zwisające z gałęzi drzew jabłka na sznurku, przygotowane akcesoria plastyczne do dekorowania masek… ostatnie trzy lata nauczyły nas pełnej gotowości! Bo, gdy o zaplanowanej godzinie odwiedza Cię dwudziestu paru sześciolatków, to nie czas na improwizacje. Mówię całkiem serio :). I z ciastem też musi być jasność – albo biszkopt z owocami i galaretką truskawkową albo beza. Krucha, w środku lekko ciągnąca się z kremem z białej czekolady i owocami. Choć zwykle się mówi, że dzieci za urodzinowymi ciastami nie przepadają, to w przypadku tej bezy nawet grama okruszków dla wykończonych rodziców nie pozostało.

Ingredients:

Meringue:

6 whites

200 6 of fine sugar (but not icing sugar)

1 tablespoon of potato flour

1 tablespoon of lemon juice

cream:

250 g of mascarpone

approx. 250 ml of whipping cream (36 % butterfat)

1 vanilla bean

200 g of good-quality white chocolate

2 generous tablespoons of powdered milk (you can add more, assess on your own)

approx. 20 g of butterfresh strawberries for decoration

2 czubate łyżki mleka w proszku (możesz dodać więcej, sam oceń)

ok. 20 g masła

do dekoracji: świeże truskawki

Directions:

  1. In a metal bowl, place separated whites. Put the mixer in low gear and start whisking. When the whites form slight shiny peaks, put the mixer in almost the highest gear and start adding sugar, spoon by spoon, continuing to whisk. The process of whisking the meringue with sugar may take a few minutes, but you shouldn’t make haste.
  2. When the meringue froth acquires shiny hue and becomes stiff, add potato flour and lemon juice. Whisk it for the last time, and place the mixture onto parchment paper. Spread it evenly. Pre-heat the oven to 180ºC and bake for 5 minutes and, then decrease the temperature to 150ºC and bake for 1.5 h. Take it out carefully and leave it on a cooling rack to cool off.
  3. To prepare the cream: heat up the cream in a pot with vanilla bean, add pieces of white chocolate and stir constantly until the chocolate melts and attains even texture (it’s best to do it on low heat and add chocolate gradually). Then, add powdered milk and butter. Stir everything and cook on low heat for around 10-12 minutes (make sure that the mixture doesn't stick to the bottom) Take out the vanilla bean out of the mixture, cut it lengthwise and place the beans in the pot. When the mixture cools off, blend everything until smooth and combine with mascarpone. It’s best to spread the cooled cream on dried meringue. At the end, add fresh strawberries. Before serving, I recommend cooling off the meringue (you can add a little bit of crumbled meringue to the cream).

Note: In order to avoid failure, egg whites should be fresh and separated from yolks well. I try to keep eggs in room temperature. The bowl that you use for whisking should be glass or metal (I wasn’t able to succeed when I was using a plastic one). I use a stationary mixer by Kitchen Aid or a manual mixer. I don’t recommend using a whisker.

  1. W metalowej misce umieszczamy oddzielone białka. Ustawiamy obroty miksera na niskie i rozpoczynamy ubijanie. W momencie ubicia białek do lekko sztywnej pianki ustawiamy obroty miksera na prawie najwyższe i rozpoczynamy dodawanie cukru, łyżka po łyżce, cały czas ubijając. Sam proces ubijania bezy z cukrem może zająć na parę minut ale nie spieszmy się.
  2. Gdy piana bezowa nabierze błyszczącego koloru i będzie sztywna dodajemy mąkę ziemniaczaną i sok z cytryny. Ubijamy ostatni raz a następnie przekładamy masę na papier do pieczenia. Rozkładamy równomiernie. Rozgrzewamy piekarnik do 180 stopnic C i pieczemy przez 5 minut, a następnie zmniejszamy temperaturę do 150 stopni C i pieczemy przez 1,5 godziny. Ostrożnie wyjmujemy z piekarnika i studzimy na kratce cukierniczej.
  3. Aby przygotować krem: śmietankę podgrzewamy w garnku z laską wanilii, dodajemy kawałki białej czekolady i stale mieszamy, aż czekolada się rozpuści i osiągnie jednolitą konsystencję (najlepiej na małym ogniu, stopniowo dodawać czekoladę). Następnie dodajemy mleko w proszku i masło. Mieszamy i gotujemy na małym ogniu przez 10-12 minut (mieszamy, żeby masa nie przywarła do dna). Wanilię wyjmujemy z masy, nacinamy wzdłuż i ziarenka przekładamy z powrotem do masy. Gdy masa nieco ostygnie, całość blendujemy na jednolitą konsystencję i mieszamy z mascarpone. Schłodzony krem najlepiej rozkładać na wysuszonej bezie. Na końcu dodajemy świeże truskawki. Przed podaniem bezę polecam schłodzić (do kremu możemy dodać odrobinę pokruszonej bezy).

Komentarz: Aby uniknąć niepowodzenia, białka jajek powinny być świeże i dokładnie oddzielone od żółtek. Staram się przechowywać jajka w temperaturze pokojowej. Miska w której ubijamy bezę powinna być szklana lub metalowa (w plastikowej niestety mi się nie udaje). Korzystam ze stacjonarnego miksera Kitchen Aid ewentualnie ręcznego. Trzepaczki nie polecam.

Następnie dodajemy mleko w proszku i masło. Mieszamy i gotujemy na małym ogniu przez 10-12 minut (mieszamy, żeby masa nie przywarła do dna). Wanilię wyjmujemy z masy, nacinamy wzdłuż i ziarenka przekładamy z powrotem do masy. Gdy masa nieco ostygnie, całość blendujemy na jednolitą konsystencję i mieszamy z mascarpone.
