   Sugar snap peas are one of my favourite memories from childhood. We were sitting on a tree with pockets stuffed with peas, and we were nibbling at them without any control. We did a similar thing with sunflower seeds! There is some kind of hidden therapeutic power in this simple activity of shelling.

   Today's post is dedicated only to the patient, as our recipe involves almost one and a half glasses of shelled peas. However, the outcome might delight you. The colour of the purée is very intensive, and its taste ideally matches the fish.

   Cukrowy groszek to jedno z moich ulubionych wspomnień z dzieciństwa. Siedzieliśmy na drzewie z kieszeniami wypchanymi groszkiem i skubaliśmy go bez opamiętania. Podobnie jak ze słonecznikiem! Jest jakaś ukryta moc terapeutyczna w tej prostej czynności obierania.

   Dzisiejszy wpis jest dedykowany wyłącznie osobom cierpliwym, bo w przepisie potrzebujemy prawie półtorej szklanki łuskanego groszku, ale za to efekt końcowy może Was zachwycić. Kolor puree jest bardzo intensywny, a jego smak doskonale komponuje się z rybą.

Ingredients:
(recipe for 4 portions)
cod fillet (approx. 800 g)
approx. 150 g of sugar snap peas
1 onion
1 tablespoon of
single cream (18% butterfat) or whole milk (3.2% butterfat)
1-2 tablespoons of butter lemon juice from
1/2 of lemon
1-2 tablespoons of olive oil (I used hot one with chilli)
handful of fresh mint leaves
sea salt and freshly ground pepper

płat polędwicy z dorsza (ok. 800 g)
ok. 150 g cukrowego groszku
1 cebula
1 łyżka
śmietanki 18 % lub mleka 3.2%
1-2 łyżki masła
sok z 1/2 cytryny
1-2 łyżki oliwy z oliwek (użyłam pikantnej z chilli)
garść listków świeżej mięty
sól morska i świeżo zmielony pieprz

Directions:

1. Wash the fish thoroughly – check whether it has any fish bones. Place it in a heat-resistant dish, season it with salt, freshly ground pepper, and sprinkle it with lemon juice and olive oil.

2. Shell the peas – you can also add the outer part of the pods – without the strings. Fry the diced onion, fresh mint leaves, and a pinch of salt in a hot pan with butter. Afterwards, add shelled peas + optionally a couple of pods. Fry it on low heat for 4-5 minutes. Set it aside until it cools, add single cream, and blend everything until smooth (we can leave a couple of peas to decorate the dish when it is finished).

3. Loosely cover the fish with aluminium foil, and place it in the oven preheated to 200ºC for 20-25 minutes. Serve the fish hot on pea purée.

 

A oto jak to zrobić:

1. Rybę dokładnie myjemy – sprawdzamy czy nie ma ości. Umieszczamy w żaroodpornym naczyniu, doprawiamy solą, świeżo zmielonym pieprzem i skrapiamy sokiem z cytryny i oliwą.

2. Groszek obieramy – możemy też dodać zewnętrzną część skórki – bez włókien. Na rozgrzanej patelni z masłem podsmażamy posiekaną w kosteczkę cebulę, świeże liście mięty i szczyptę soli. Następnie dodajemy obrany groszek + ewent. kilka skórek. Smażymy na małym ogniu przez 4-5 minut. Odstawiamy aż ostygnie, dodajemy śmietankę i blendujemy na gładkie puree (kilka ziarenek groszku możemy zostawić do późniejszej dekoracji).

3. Naczynie z rybą okrywamy folią aluminiową i umieszczamy w rozgrzanym piekarniku w 200 stopniach C. Pieczemy przez 20-25 minut. Rybę podajemy na ciepło z puree z groszku.
