   Since childhood, I've had a soft spot for cheesecakes. Ideally no-bake cheesecakes. Obligatorily, without raisins and other dried fruit and nuts additions. It has to be delicate in taste. The creamy texture a little bit like panna cotta dessert. Served cold, without palpable clumps of gelatin. I've tried numerous versions – with white chocolate, with curd cheese that has been ground three times, with packed curd cheese, with Philadelphia soft cream cheese. This recipe is based on adding thick natural yoghurt and condensed milk. I'd like to point out in the beginning – it isn't a light version, but…the end of the summer has to be sweetened up!

   Od dziecka mam słabość do serników. Najlepiej te na zimno. Obowiązkowo bez rodzynek i innych bakaliowych dodatków. W smaku musi być delikatny. Konsystencja kremowa trochę jak deser panna cotta. Podany na zimno, bez wyczuwalnych grudek żelatyny. Próbowałam wielu wersji – z białą czekoladą, z mielonym trzykrotnie twarogiem, z twarogiem z pudełka, z serkiem typu philadelphia. Ten przepis opiera się na dodaniu gęstego jogurtu naturalnego i mleczka skondensowanego. Od razu uprzedzam – nie jest to wersja light, ale … koniec wakacji trzeba sobie osłodzić!

Ingredients:

filling:

400 g of dense natural yoghurt

330 g of condensed sweetened milk

3 tablespoons of honey

approx. 250 g of fresh blueberries

250 g of mascarpone

20 g of gelatin

330 g of whipping cream (36 % butterfat)

bottom layer:

200 g of sponge biscuits

100 g of butter

50 g of roasted almonds

330 g mleczka skondensowanego słodzonego

3 łyżki miodu

ok. 250 g świeżych jagód

250 g mascarpone

20 g żelatyny

330 g śmietany 36 %

spód:

200 g biszkoptów

100 g masła

50 g prażonych migdałów

Directions:

1. Dry the sponge biscuits in the oven at low temperature, but don't burn them. Place them in a blender and blend them. Add roasted almond flakes and melted butter. Line a baking tray with baking paper and place the blended sponge biscuits on the bottom. Press them to create an even surface.

2.  Mix mascarpone, yoghurt, and condensed milk in a mixer. Add honey and mix everything again. If you want to prepare a two-coloured cheesecake, divide the filling into two halves and place both of them in different dishes. Add 3/4 of the blueberries to the first half and stir until evenly blended (put the second half in the refrigerator). Dissolve half of the prepared gelatin (10 g) in warm water. When the temperature of gelatin lowers a bit, add it to the cheese filling. Stir everything. Whisk half of the whipping cream and gradually add it to the filling. Pour the filling over the bottom layer of the cheesecake. Put it in the refrigerator for 4-5 hours until settled down.

3.  Mix the second half of the filling with 1/4 of the blueberries. Add the remaining 10 g of gelatin dissolved in warm water, and mix everything with the cheese filling. Whisk the remaining part of the whipping cream and add it to the filling. Pour the whole mixture over the settled down and cooled filling. Leave the cheesecake in the refrigerator for the whole night. Decorate everything with blueberries and fresh flowers before serving.

A oto jak to zrobić:

1. Biszkopty suszymy w piecu w niskiej temperaturze, tak aby się nie spaliły. Przekładamy do blendera i miksujemy. Dodajemy prażone płatki migdałów i rozpuszczone masło. Tortownice wykładamy papierem do pieczenia i wykładamy spód zmieloną masą dociskając by wyrównać powierzchnię.

2.  Mascarpone, jogurt, mleko skondensowane mieszamy w mikserze. Dodajemy miód i dalej mieszamy. Jeżeli chcemy przygotować sernik dwukolorowy, to masę dzielimy na pół i przelewamy do oddzielnych naczyń. Do pierwszej masy dodajemy 3/4 jagód i mieszamy do połączenia się. (drugą część masy przechowujemy w lodówce). Połowę żelatynę (10 g) rozprowadzamy w ciepłej wodzie. Gdy temperatura żelatyny nieco opadnie, dodajemy do masy serowej. Całość mieszamy. Ubijamy połowę śmietanę i dodajemy partiami do naszej masy. Całość wylewamy na spód. Chłodzimy przez 4-5 godzin w lodówce, aż lekko stężeje.

3. Pozostałą część masy łączymy z 1/4 jagód. Dodajemy pozostałe 10 g żelatyny rozprowadzonej w ciepłej wodzie i mieszamy z masą serową. Ubijamy pozostałą część śmietany i łączymy z masą. Całość wylewamy na stężoną i schłodzoną masę. Sernik pozostawiamy w lodówce na całą noc. Przed podaniem dekorujemy jagodami i świeżymi kwiatami.
