  Fruit under a crumble topping is one of the first desserts that I learnt many years ago. A classic combination of – butter, sugar, and flour allows us to hide all types of fruit underneath it (also including the frozen ones, which is especially helpful during the autumn-winter season). Today, I'd like to show you a slightly modified version that is great as well – especially if you like sweet breakfasts. I replaced the flour with bran mix (you can also use regular rolled oats, crumbled walnuts, hazelnuts, or almonds), the sugar with honey, and the butter with coconut oil. As an addition, I used a handful of seasonal fruit and placed everything in the oven for 15 minutes. With a bit of natural yoghurt, whipping cream, or a ball of vanilla ice-cream!

   Owoce pod kruszonką to jeden z pierwszych deserów, które nauczyłam się wiele lat temu. Klasyczne połączenie – masła, cukru i mąki sprawia, że możemy pod nim ukryć wszystkie owoce świata (łącznie z mrożonymi, co ułatwia nam szczególnie w sezonie jesienno-zimowym). Dzisiaj chciałabym Wam pokazać nieco alternatywną wersję, która również świetnie się sprawdza – szczególnie jeżeli lubicie słodkie śniadania. Mąkę zastąpiłam mieszanką otrębów (mogą to być również zwykłe płatki owsiane, pokruszone orzechy włoskie, laskowe, migdały), cukier miodem, a masło olejem kokosowym. Do tego garść sezonowych owoców i do piekarnika na 15 minut. Z odrobiną jogurtu naturalnego, słodkiej śmietany lub z gałką lodów waniliowych!

Ingredients:

6-8 peaches (it's best to use hard ones)

handful of huckleberries

150 g of bran mix (oat, spelt, wheat, rye)

handful of rolled oats

handful of walnuts

50 g of almond flakes

1 – 2 tablespoons of liquid honey

1 teaspoon of cinnamon

2 tablespoons of coconut oil

Served with: Greek yoghurt, whipping cream (30% butterfat), or vanilla ice-cream

 

Skład:

6-8 brzoskwiń (najlepiej twarde)

garść borówek amerykańskich

150 g mieszanki otrębów  (owsiane, orkiszowe, pszenne, żytnie)

garść płatków owsianych

garść orzechów włoskich

50 g płatków migdałowych

1-2 łyżki płynnego miodu

1 łyżeczka cynamonu

2 łyżki oleju kokosowego

do podania: jogurt grecki, śmietanka 30% lub lody waniliowe

Directions:

1. Cut the peaches into quarters and place them in a cast-iron pan together with the huckleberries – the pan ought to be greased with coconut oil beforehand.

2. Mix the bran, walnuts, and almond flakes with coconut oil, cinnamon, and honey. Spread the whole mixture over the fruit. Bake everything in the oven preheated to 200ºC for 15-18 minutes. Serve hot with Greek yoghurt, whipping cream, or vanilla ice-cream.

Comment: You can replace peaches with any type of fruit. Instead of honey, you can add some brown sugar.

A oto jak to zrobić:

1. Pokrojone ćwiartki brzoskwiń i borówki umieszczamy w żeliwnej patelni – natłuszczonej wcześniej olejem kokosowym.

2. Otręby, orzechy i płatki migdałowe mieszamy z olejem kokosowym, cynamonem i miodem. Całość przekładamy na owoce. Pieczemy w rozgrzanym piekarniku w 200 stopniach C przez 15-18 minut. Podajemy na ciepło z jogurtem greckim, śmietanką lub lodami waniliowymi.

Komentarz: Brzoskwinie możemy zastąpić dowolnym owocami. Zamiast miodu możemy dodać brązowy cukier.

   Bake everything in the oven preheated to 200ºC for 15-18 minutes.
