Without a doubt, that’s one of our favourite pasta recipes – and with snow pea, it’s the quintessence of summer. The proportions are absolutely discretionary as, depending on the number of guts, I add slightly more bacon or parmesan. Some like more liquidy carbonara – then, I add mascarpone and a little bit of sweat sour (36% butterfat) to bacon or pancetta (an Italian pork bacon, you can easily get it at most shops selling cold cuts). Yes, I know that the meal is far from being dietetic, but it wasn’t even aspiring to this title. It’s filling and it reminds me of carefree moments – probably thanks to the magic of snow pea!

Bez wątpienia to jeden z naszych ulubionych przepisów na makaron – a z groszkiem cukrowym, to już kwintesencja lata. Proporcje są absolutnie dowolne, ponieważ w zależności od liczby głodomorów dodaję nieco więcej boczku lub parmezanu. Jedni wolą bardziej płynne carbonara – wówczas do podsmażonego boczku lub pancetty (włoski boczek wieprzowy, można go dostać z powodzeniem w większości sklepów z wędlinami) dodaję mascarpone i odrobinę więcej śmietanki 36 %. Tak, wiem, to danie zdecydowanie nie należy do dietetycznych ale chyba nigdy nie pretendowało do tego miana. Jest sycące i przywodzi na myśl beztroskie chwile – zapewne dzięki magii groszku!

Ingredients:

(recipe for 4 portions)

approx. 450 g of tagliatelle cooked al dente

approx. 20 dag of smoked bacon or pancetta

3 eggs + 1 yolk

250 g of mascarpone + 2 tablespoons of sour cream (36% butterfat)

(optional)

large handful of grated Parmesan cheese

sea salt and freshly ground pepper

approx. 150 ml of fresh snow pea (peeled)

Skład:

(przepis na 4 porcje)

ok. 450 g ugotowanego al dente makaronu tagliatelle

ok. 2o dag wędzonego boczku lub pancetty

3 jajka + 1 żółtko

250 g serka mascarpone + 2 łyżki śmietanki 36% (opcjonalnie)

duża garść świeżo startego parmezanu

sólo morska i świeżo zmielony pieprz

ok. 150 g świeżo groszku cukrowego (obrany)

Directions:

  1. Mix eggs, yolk, and grated parmesan in a medium-size bowl. Season everything with salt and freshly ground pepper. In a hot pan, fry bacon or pancetta cut into fine strips. Set it aside and wait until it cools off. Later, combine it with mascarpone and sour cream.
  2. Place the al dente cooked pasta back into the pot – leave it on low heat – and add the egg mixture with mascarpone. Stir everything thoroughly (it’s best to do it until the eggs curd). In the end, add peeled raw snow pea (you can delicately fry it beforehand). Serve the pasta immediately!

A oto jak to zrobić:

  1. W średniej misce łączymy jajka, żółtko i tarty parmezan. Doprawiamy solą i świeżo zmielonym pieprzem. Na rozgrzanej patelni podsmażamy pokrojony w cienkie paski boczek lub pancettę. Odstawiamy z ognia, czekamy aż nieco przestygnie i łączymy z serem mascarpone i śmietanką.
  2. Ugotowany al dente makaron odcedzamy i przekładamy z powrotem do garnka – pozostawiamy na małym ogniu – i dodajemy mieszanką jajeczną oraz boczek z mascarpone. Całość dokładnie mieszamy (najlepiej do momentu, przed ścięciem się jajek). Na końcu dodajemy obrany, surowy groszek (może go wcześniej delikatnie podsmażyć na maśle). Makaron podajemy natychmiast!
