   The aura of autumn days makes us choose something sweet more often. When Hania came to this world, I learnt not to buy candy bars – admittedly, I'd never been their great fan. However, the single thought that I always had something close at hand for a rainy day calmed me down. Now, my hiding places are all empty, and if we want to eat something sweet, I try to bake more often. This recipe is perfect because it doesn't need much engagement. It doesn't require the use of flour or sugar, so that's another plus :-) I recommend roasting the hazelnuts beforehand. As a result, their taste is totally different, more intense. The pastry can be stored under some kind of cover for even up to a couple of days. So, who is up for it?

   Jesienne dni sprawiają, że coraz częściej sięgamy po coś słodkiego. Odkąd Hania jest z nami, nauczyłam się nie kupować batonów – co prawda nigdy nie byłam ich wielką fanką. Jednak świadomość, że mam coś pod ręką na czarną godzinę, uspokajała. Teraz moje skrytki świecą pustkami, a jeżeli przyjdzie nam ochota na słodycze, to staram się częściej piec. Ten przepis jest doskonały, bo nie wymaga zbyt dużego zaangażowania. Jest bez mąki i cukru, więc kolejny atut :-) W przepisie proponuję orzechy wcześniej uprażyć, gdyż ich smak jest zupełnie inny, bardziej intensywny. Ciasto można przechowywać w zamknięciu nawet kilka dni. To, kto chętny?

(baking tray with a diameter of 28 cm, but you can use a smaller one as well)

150 g of pitted California prunes

150 g of dried dates

200 g of hazelnuts

 

80 g of butter

4 tablespoons of good-quality cocoa

3 tablespoons of honey

5 eggs (separate the yolks and whites) + pinch of salt

2 tablespoons of orange jam or orange zest (optionally)

for decoration:

1 bar of chocolate (melted in water bath)

fresh mint or lemon balm leaveshandful of roasted walnuts

(forma o średnicy – 28 cm, ale może być mniejsza)

150 g suszonych śliwek kalifornijskich

150 g suszonych daktyli

200 g orzechów laskowych

80 g masła

4 łyżki dobrego kakao

3 łyżki miodu

5 jajek (oddzielnie żółtka i białka) + szczypta soli

2 łyżki dżemu pomarańczowego lub otarta skórka z pomarańczy (opcjonalnie)

do dekoracji:

1 tabliczka czekolady (rozpuszczona w kąpieli wodnej)

listki świeżej mięty lub melisy

garść prażonych orzechów włoskich

Directions:

1. Spread the hazelnuts on the baking tray and place it in the oven preheated to 200ºC. Bake them for approx. 8-10 minutes until dark brown. Take them out of the oven and wait until they cool. Then, peel them (it is best to place them on a piece of cloth and rub a little bit – the peel should fall off easily). Blend everything.

2. Pour some boiling water over the prunes and dates and set them aside for 10 minutes. Strain them and blend until smooth. Add blended hazelnuts, cocoa, jam / orange zest, honey, melted butter, and yolks. Mix everything. In a separate dish, whisk the whites until thick. Add them to the hazelnut mixture. Delicately mix the ingredients with a spatula until evenly blended. Pour the mixture into a greased baking tray. Bake it in the oven preheated to 180ºC (use the oven function with upper and lower heating elements switched on) for approx. 40 minutes. Take the pastry out of the oven and pour the melted chocolate over it. We can decorate it with hazelnuts and mint or lemon balm leaves.

Comment: We can also roast the hazelnuts in a pan. However, they will have a more intense taste if we choose the oven.

A oto jak to zrobić:

1.Orzechy laskowe rozkładamy na blasze i umieszczamy w rozgrzanym piekarniku w 200 stopniach C. Pieczemy ok. 8-10 minut, aż się zarumienią. Po wyjęciu czekamy aż ostygną, a następnie obieramy ze skórki (orzechy najlepiej włożyć do szmatki i potrzeć – skórka powinna sama odpaść). Całość miksujemy.

2.Śliwki i daktyle zalewamy wrzątkiem i odstawiamy na 10 minut. Odcedzamy i miksujemy na gładką masę. Dodajemy zmiksowane orzechy, kakao, dżem / otartą skórkę pomarańczową, miód, roztopione masło i żółtka. Mieszamy. W oddzielnym naczyniu ubijamy białka na pianę, którą dodajemy do masy orzechowej. Za pomocą szpatułki mieszamy do połączenia się składników. Ciasto przelewamy do natłuszczonej formy. Pieczemy w rozgrzanym piekarniku w 180 stopniach C (opcja: góra-dół) przez 40 minut. Ciasto wyjmujemy z piekarnika i polewamy roztopioną czekoladą. Możemy udekorować orzechami i listkami mięty lub melisy.

Komentarz: Orzechy możemy uprażyć również na patelni, ale w piekarniku będą miały bardziej intensywny smak.
