I need to confess that when it comes to cheesecakes, I’m pretty demanding – I’m trying to bake them with the use of real curd cheese. The fatter, the better. I avoid all types of curd cheese-like products, that can be found packed on the shelves. In the past, I wasn’t able to tell the difference. Now, it’s important for me. When blending the curd cheese, however, I take the short route by using a manual blender. I remember to add milk or sour cream to make the product easier to blend. That’s how you avoid overheating or burning the blender. I like when the texture of the cheesecake is creamy with a slightly sourish flavour – owing to the grated lime zest and lime juice. The white chocolate will delicately sweeten its taste as there is considerably little sugar in it. And one more important issue – forget about adding raisins! And what are your favourite cheesecakes? Baked or served cold? Creamy of heavier classic Polish ones?

Muszę Wam się przyznać, że w kwestii serników jestem dość wymagająca – staram się piec z prawdziwego twarogu. Im tłustszy tym lepszy. Unikam wszelkich produktów twarogowych, czyli z tzw. pudełku. Kiedyś nie rozpoznawałam różnicy, teraz ma to dla mnie znaczenie. Przy mieleniu twarogu, idę jednak na skróty korzystając z ręcznego blendera, pamiętając o dodaniu odrobiny mleka lub śmietanki, aby masa łatwiej się mieliła. Unikniemy wówczas przegrzania lub spalenia blendera. Lubię jak konsystencja sernika jest kremowa o nieco kwaskowatym smaku – dzięki otartej skórce i soku z limonki. Biała czekolada delikatnie osłodzi smak, bo cukru jest stosunkowo mało. I jeszcze jedna ważna sprawa – nie ma mowy o dodaniu rodzynków! A jakie Wy najbardziej lubicie serniki? Pieczone czy na zimno? Kremowe czy bardziej z tych ciężkich, polskich klasycznych?

Ingredients:

1 kg of full fat curd cheese (milled*)

4 eggs

3 tablespoon of potato flour

150 g of sugar

lime zest and juice from 1 lime

100 g of white chocolate

mousse:

large handful of red currant

2 tablespoons of gelatine + a little bit of water

2-3 tablespoons of brown sugar

1 kg tłustego twarogu (zmielonego*)

4 jajka

3 łyżki mąki ziemniaczanej

150 g cukru

otarta skórka i sok z 1 limonki

100 g białej czekolady

mus:

duża garść czerwonych porzeczek

2 łyżki żelatyny + odrobina wody

2-3 łyżki brązowego cukru

Directions:

  1. Preheat the oven to 200ºC. Melt the chocolate in a water bath and leave it aside until cools. Blend the curd cheese until smooth (I use a manual blender, add a little bit of milk to avoid dryness). Combine the milled curd cheese with sugar, eggs, potato flour, melted chocolate, grated lime zest, and lime juice. Stir everything thoroughly with a spatula (don’t use a blender to avoid filling the mixture with air).
  2. Place the mixture in a baking tray lined with parchment paper. Decrease the temperature in the oven to 160ºC. Place a baking tray with water on the lower level and the baking tray with the mixture on the higher level. Bake the cheesecake for 60 minutes. Turn off the oven, leave the oven ajar and wait until it cools down. Take it out carefully after 15 minutes, and leave it on a cooling rack to cool off.
  3. To prepare the currant mousse: cover peeled currant with sugar and delicately fry them in a pot. When the fruit releases juices, add gelatine mixed with water. Stir everything thoroughly and cool it off in the fridge. After one hour, the texture should be thicker – spread it on top of the cheesecake and cool it off some more (it’s best to cool it off 2-3 hours before serving).

A oto jak to zrobić:

1. Piekarnik rozgrzewamy do 200 stopni C. Czekoladę roztapiamy w kąpieli wodnej i odstawiamy aż ostygnie. Twaróg miksujemy na gładką masę (korzystam z ręcznego blendera, dodaję odrobinę mleka, żeby masa nie była zbyt sucha). Do zmielonej masy dodaję cukier, jajka, mąką ziemniaczaną, roztopioną czekoladę, otartą skórkę i sok z limonki. Całość dokładnie mieszam za pomocą szpatułki (nie mikserem, gdyż chcę uniknąć napowietrzenia się masy).

2. Masę przekładamy do formy wyłożonej papierem do pieczenia. Temperaturę piekarnika zmniejszamy do 160 stopni C. Na najniższym poziomie umieszczamy blachę z wodą, na wyższym piętrze formę z ciastem. Sernik pieczemy 60 minut. Wyłączamy piekarnik, uchylamy drzwiczki i czekamy, aż ostygnie sernik. Po 15 minutach ostrożnie wyjmujemy z piekarnika i studzimy na kratce cukierniczej.

3. Aby przygotować mus porzeczkowy: obrane porzeczki zasypujemy cukrem i delikatnie podsmażamy w garnuszku. Gdy owoce puszczą sok dodajemy wymieszaną z wodą żelatynę. Całość dokładnie mieszamy i schładzamy w lodówce. Po godzinie konsystencja powinna być bardziej gęsta – rozkładamy ją na powierzchni sernika i dalej schładzamy (najlepiej 2-3 godziny przed podaniem).

With each year, coming up with new Christmas recipes becomes a greater challenge for me. I still repeat to myself that there were so many recipes and that it's more difficult to surprise you with something new. Deep inside my heart, however, I tell myself that each person has their own tastes (mostly those that we associate with our childhood) and remains faithful to them. Especially during Christmas when it's all about tradition. However, if you were searching for a slight change, I'm glad to share with you a recipe for a cheesecake today. The whole secret lies in the baking technique and… you'll see yourself!

  Z każdym rokiem wymyślanie przepisów świątecznych staje się dla mnie większym wyzwaniem. Wciąż sobie powtarzam, że już tyle było i coraz trudniej jest mi Was zaskoczyć. W głębi serca jednak powtarzam sobie, że i tak każdy z nas ma swoje ulubione smaki (najczęściej te, zapamiętane z dzieciństwa) i jest im wierny. Szczególnie w święta, kiedy nakazuje nam tradycja. Gdybyście jednak poszukiwali małej odmiany, to dzisiaj z przyjemnością dzielę się przepisem na sernik. Cała tajemnica tkwi w sposobie pieczenia i … a zresztą sami zobaczcie!

Ingredients:

(baking tray with a diameter of 26-29 cm)

1 kg of curd cheese (it's best to use fat curd cheese and mix it with a blender)

250 g of mascarpone

250 g of natural yoghurt (you can use Greek yoghurt)

180 g of sugarlemon juice and lemon zest from 1 lemon

approx. 3-4-centimetre piece of fresh ginger (peeled and grated)

1 tablespoon of potato flour

5 eggs

250 g of whipping cream (36 % butterfat)

caramel topping

120 g of brown sugar

approx. 150 ml of whipping cream (36 % butterfat)

2 tablespoon of water

1 kg sera twarogowego (najlepiej tłusty, miksujemy blenderem)

250 g serka mascarpone

250 g  jogurtu naturalnego (może być grecki)

180 g cukru

sok i otarta skórka z 1 cytryny

ok. 3-4 cm kawałek świeżego imbiru (obrany i starty na tarce)

1 łyżka mąki ziemniaczanej

5 jajek

250 ml śmietanki 36 %

polewa karmelowa

120 g brązowego cukru

ok. 150 ml śmietanki 36 %

2 łyżki wody

Directions:

1. Blend the curd cheese. Add mascarpone, yoghurt, whipping cream, sugar, lemon juice / lemon zest, grated ginger, and flour. Stir everything thoroughly. Then, add eggs and stir until all ingredients blend together (not for too long so that you avoid adding any unnecessary air to the pastry). Pour the pastry into the greased baking tray and place in the oven preheated to 160ºC (place a baking tray filled with water on the lower level). Bake the cheesecake for approx. 70 min and them turn off the oven and leave it ajar. It's important to wait until the whole cake cools down and becomes dense.

2. To prepare the caramel: in a medium-sized pot, heat up some sugar with water. Wait until the ingredients melt and add whipping cream – don't stir, just move the pot a little in each direction so that the caramel mixes evenly. Decrease the heat and leave it for 2-3 minutes until it becomes even.

3. When the cheesecake cools down, pour the ready (but not hot!) caramel topping over it. You can decorate it with dried lemon slices and fresh sprigs.

  1. Twaróg miksujemy blenderem, dodajemy mascarpone, jogurt, śmietankę, cukier, sok / skórkę z cytryny, tarty imbir i mąkę. Całość dokładnie mieszamy. Następnie dodajemy rozbite jajka i mieszamy do połączenia się składników (nie za długo, żeby nie napowietrzyć masy). Ciasto przelewamy do natłuszczonej formy i umieszczamy w rozgrzanym piekarniku w 160 stopniach C (na niższe piętro wstawiamy blachę z wodą). Sernik pieczemy ok. 70 minut, następnie wyłączamy piekarnik i uchylamy drzwiczki. Ważne, żeby poczekać aż masa ostygnie i zrobi się zwarta.
  2. Aby zrobić karmel: w średnim rondlu podgrzewamy cukier z wodą, czekamy aż się rozpuści a następnie dolewamy śmietankę – nie mieszamy, jedynie poruszamy garnkiem, tak żeby masa się wymieszała. Zmniejszamy ogień i pozostawiamy przez 2-3 minuty, aż uzyskamy jednolity karmel.
  3. Gdy sernik wystygnie polewamy gotowym (nie gorącym!) karmelem. Możemy udekorować suszonymi plastrami cytryny i świeżymi gałązkami.

Pieczony sernik kokosowy z mango i z granatem

I have never been very eager to bake cheesecakes. As a child, I definitely preferred the one served cold – without raisins – with pink jelly and slices of peach on the top. Over time, your favourite tastes change – even though I retained my resentment towards raisins :-) If you like cheesecakes that are moist and quite fluffy, this recipe will be just right!

Pieczenie serników nigdy nie przychodziło mi łatwo. Jako dziecko zdecydowanie wolałam ten na zimno – bez rodzynek – z różową galaretką i plastrami brzoskwini na wierzchu. Z czasem smaki się zmieniają – chociaż niechęć do rodzynek pozostała :-) Jeżeli lubicie serniki wilgotne i dość puszyste, to ten przepis jest w sam raz!

Ingredients:

(baking tray with a diameter of 23-26 cm)

1 kg of full fat curd cheese, blended twice*

5 eggs

100 g of butter

1 glass of sugar (I used cane sugar)

1 teaspoon of natural Moroccan almond extract

250 ml of coconut milk (I used the white dense part)

80 g of coconut flakes

1 tablespoon of potato flour

for decoration:

1 peeled mango + 1/2 of pomegranate + 1 tablespoon of coconut flakes

*blend the curd cheese with a blender – I think that it tastes better in this recipe than the ground one from the package. All of the ingredients should be at room temperature.

1 szklanka cukru (użyłam trzcinowego)

1 łyżeczka naturalnego ekstraktu z migdała z Maroko

250 ml mleczka kokosowego (użyłam tą białą, zawiesistą część)

80 g wiórków kokosowych

1 łyżka mąki ziemniaczanej

do dekoracji:

1 obrane mango + 1/2 granatu + 1 łyżka wiórków kokosowych*

twaróg miksuje za pomocą blendera – myślę, że w tym przepisie lepiej smakuje niż zmielony z pudelka. Wszystkie składniki powinny być w temperaturze pokojowej.

Directions:

  1. Mix the butter with sugar until thick and fluffy. Gradually add the curd cheese and mix until all ingredients are combined. Afterwards, add eggs, coconut flakes, coconut milk, potato flour, and natural almond extract. Mix it (not for too long).
  2. Place the ready mixture into a greased baking tray. Bake it in the oven preheated to 160ºC for 60 minutes. Cool it down by leaving the oven door ajar.
  3. Decorate the cooled down cheesecake with peeled slices of fresh mango and pomegranate seeds. It's best to keep the cheesecake in the fridge for at least 2 hours to cool it down. You can sprinkle the top with coconut flakes.

  1. Masło ucieramy z cukrem na puszystą masę. Porcjami dodajemy twaróg i miksujemy do połączenia się składników. Następnie dodajemy jajka, wiórki kokosowe, mleko kokosowe, mąkę ziemniaczaną i naturalny ekstrakt migdałowy. Miksujemy (nie za długo).
  2. Tak przygotowaną masę przekładamy do natłuszczonej formy. Sernik pieczemy w rozgrzanym piekarniku w 160 stopniach C przez 60 minut. Studzimy w piekarniku z uchylonymi drzwiczkami.
  3. Ostudzony sernik dekorujemy obranymi płatami świeżego mango i ziarenkami granatu. Przed podaniem sernik najlepiej schłodzić min. 2 godziny w lodówce. Możemy posypać wierzch wiórkami kokosowymi.

Bake it in the oven preheated to 160ºC for 60 minutes. Cool it down by leaving the oven door ajar.
